Laap (also spelled Larb) is the unofficial national dish of Laos and a staple at any celebration. It's a type of minced meat salad, but calling it just a "salad" doesn't do it justice. It's a vibrant explosion of flavors: spicy, sour, salty, and packed with fresh herbs.
